Returning from school, to a warm, freshly cooked meal is one of our most cherished memories. The warm food had a heart warming effect. Some of us, who didn’t have warm meals waiting on plates for us, slowly progressed from biscuit packets to Maggi noodles to… sandwiches! Sandwiches are undoubtedly a crowd favourite- anyone who has basic cooking knowledge can make it, it can be had warm or cold and it’s exceptionally tasty. Add veggies, add meat, add eggs, add all you want and you’ll still have a tasty sandwich. In fact, it’s very hard to make a bad sandwich, probably the reason why it’s such a huge hit! Working mothers gave and continue to give sandwiches for breakfast and lunch, the kids never seem to get tired of it- change the sandwich filling a little with an extra dash of vegetables or meat, and voila, you have an entirely new dish to put in those tiffin boxes. Sandwiches are very healthy choices too and make for a wholesome snack.
Here are a few sandwich recipes, that anyone can make in a jiffy, but is mouth watering at the same time.
#1 Coriander Chutney Sandwich
A lunchbox favourite, a party starter and a scrumptious evening snack- that’s what the coriander chutney sandwiches stand for! It satiates our hunger, but is at the same time, light on our stomachs. There is absolutely no compulsion to serve it hot or to toast the bread slices, and is therefore every working mothers’ go to snack, to make for their famished children, returning from school. This sandwich filling is the top scorer in the ‘simple sandwich recipes’ list.
- 2 tbsp coriander chutney
- Bread Slices
- Curd- 2 teaspoons
Take the bread slice and chop off the edges. Spread butter evenly on every slice. This will prevent the chutney from making the bread soggy. Spread out the chutney mix evenly on top of the butter. Put the bread slices together and you are done! You can serve it chilled or serve it right away. It’ll also make for a perfect lunch at school. #2 Chicken Mayo Sandwich
It would be fair to assume that every non vegetarian swoons when they hear chicken mayo! Every cafe in town serves the dish. Ever thought of making one yourself? If you have just started making baby steps in the kitchen, then chicken mayo sandwich is one of the best sandwich ideas to start with. You make a few servings of these, then you don’t have to prepare anything else. That’s how filling it is! Throwing a party? Don’t exhaust your energies, searching for other sandwich recipes!
- Shredded or minced chicken ( raw or cooked- knick some from your mom’s chicken curry!)- 1 cup
- Mayonnaise- 3 tablespoons
- Chicken Masala or Garam Masala- a generous pinch
- Red chilly powder- 1 teaspoon
- Salt and pepper- as required
- Chopped onions and cucumber- 3 tablespoons
- Minced garlic – 1 tablespoon
- Bread slices- 4
Cook the chicken in a pressure cooker, if it’s not already cooked. Heat a pan and coat it with coconut or olive oil. Once the oil has heated up, toss in all the ingredients, except the mayonnaise, cucumber onion mix, bread and butter! Thoroughly mix the ingredients to make tasty sandwich fillings. Let the mix cool down a little, and then mix it with the mayonnaise, onion and cucumber, and your filling is ready. Chicken Mayo sandwiches always taste better toasted. Spread out butter on the bread slices and toast it on a heated pan. Spread a generous amount of filling on the slices, and close with another slice. You can zip the edges of the sandwich, if you have a sandwich maker, but its’s just as fine even if you don’t. Cut the sandwiches into petite perfect triangles and serve!
#3 Potato Masala Sandwich
How can aloo not find a place in an Indian sandwich recipes list? Potatoes go just as well with toasted bread, as it does with Pooris. If you want to make a quick snack or if you are searching for sandwich ideas for lunch, you can prepare this dish with minimal effort. You won’t even have to step out for ingredients- which householder forgets to stock up on potatoes!
- Bread: 6 or 8 slices
- Boiled Potatoes: 3
- Chopped tomatoes: 1/2 cup
- Chopped onions: 1/2 cup
- Chopped green chilly: 1
- Chopped capsicum: 1
- Chilly powder: 3/4 tablespoon
- Salt as required
Peel the boiled potatoes and mash it or chop into small pieces if you prefer it that way. Heat a pan and add oil. Once the oil has heated enough, add the chopped onion, tomato, green chilly, chilly powder and salt. Mix thoroughly, cook for over 5 mins, so that the onions turn a golden yellow and the flavour of the tomatoes seep into the potatoes. Once the sandwich filling has cooled down sufficiently, add the chopped capsicums and mix again. Butter the bread slices and spread the filling on it. Cover the masala spread bread with another slice, and place it on a grill. Grill the sandwich, till both sides turn crispy, golden brown in colour. Slice into triangles and serve hot with tomato ketchup!
#4 Grilled Paneer Sandwich
Paneer is to a vegetarian, what chicken is to the clan of carnivorous human beings! Us Indians, have always had a flare for appropriating anything remotely English and adding some Desi swag to it! Paneer sandwich is one of those Indian sandwich recipes that score high on innovation and creativity. Paneer sandwiches, served hot, will warm your heart and fill your stomach. There are plenty of tasty sandwich recipes in terms of Paneer, each having a flavour of it’s own. Here is one simple recipe to relish.
- Bread- 2 slices
- Paneer- 20 grams
- Chopped onion: 1/2 cup
- Chopped tomatoes, chopped cabbage: 1/4 cup each
- Chopped capsicum: 1
- Salt and Pepper as required
- A pinch of turmeric- for colouring
- Jeera powder (optional)
Heat a pan and pour oil as required. Cook the onions, tomatoes and cabbage till it turns a golden brown colour. Add pepper and salt as required and mix thoroughly. In goes the paneer and turmeric powder! Don’t cook the paneer for more than 5 minutes, for it may turn hard. Once the mix is ready, turn off the stove, add uncooked capsicums and mix again. Spread butter on the bread slices, top it with the delicious sandwich filling and cover with another butter coated slice of bread. Grill the sandwiches till the bread turns a scrumptious golden brown. Serve with ketchup or mint chutney and woo your guests and family!
#5 Tuna Sandwich
If you have lived for any period of time, in coastal cities, then fish is sure to be a favourite. Fried, curried or grilled- there is a flavour to these aquatic beings that thulps every other kind of meat- the distinct freshness of the vast, infinite seas! Fish tastes just as good between bread slices, as it does with rice. Make a delicious, distinct tasting sandwich, with one of the most easily available fish in the market- tuna. This one is a perfect sandwich idea for lunch and since tuna is a warehouse of nutrients, it ticks the healthy meal bullet point too!
- Canned Tuna- 250 grams
- Chopped Celery- 1 cup
- Mayonnaise- 5 tablespoons
- Mustard- 2 teaspoons
- Lemon- 2 tablespoons
- Chopped onions- 1/2 cup
- Salt and Pepper- as required
- Bread- 8 slices
Canned Tuna is usually cooked, requiring no additional cooking. However, if it’s not cooked, boil it in water and let it cook properly. Clean the fish and move it into a bowl. In goes all ingredients except bread and butter! Mix the ingredients thoroughly, and leave it aside for over 10 minutes, so that the flavours seep into the fish properly. Spread butter on the bread slices and toast it till it attains a glistening golden brown tinge. Spread the tasty sandwich filling on the bread slices, cover it and cut into triangles. Feel free to grill the sandwiches if you prefer it that way!
#6 Open Faced Roasted Tomato Sandwich:
All of us have had sandwiches stacked with tomatoes, cucumber and cheese. It’s one of the easiest sandwich recipes in town- no cooking, no grilling, no grinding! This recipe will give an entirely new flavour to this everyday lunchbox dish. On the downside, you’ll need to put in a little more effort in terms of cooking. But hey, you don’t grumble about extra effort when it comes to food! If you have any such woes, a bite into the dish is sure to put them at rest.
- Tomatoes- 3
- Salt and Pepper- as required
- Bread- 6 slices
- Garlic paste- 1 tablespoon
- Coriander chutney- 4 tablespoons
Spread out the coriander chutney evenly on bread slices. Spread garlic paste evenly on the tomato slices. Place 2 or 3 slices each on the face of the bread slices. Top it off with a sprinkling of pepper and salt. Place the open faced sandwiches in the oven and bake it for 15 minutes. Open your oven to witness perfectly seasoned and roasted reddish brown tomato sandwiches garnished with the pungent smell of garlic paste! Now there is nothing left to do, but to dig in and savour the taste! The dish is best served hot.
#7 Grilled Chocolate Cheese Sandwich:
We saved the best for the last. The last treat we have got for you is a chocolaty cheesy affair. Biting into grilled chocolate sandwiches and letting the warm chocolate drip over to create a gorgeous mess, is a practice many of us never grow tired of. There is something about those chocolate brown mustaches that we make in the process, that is worth cherishing. Ever made one of those darlings yourself? If not, here’s the jack of all sandwich recipes.
- Milk chocolate: 200 grams
- Butter: 2 tablespoons
- Chocolate chips: 2 tablespoons
- Cheese as required
- Bread: 4 slices
Place a saucepan of water on the stove to boil. Once it has started boiling, place another bowl with the milk chocolate in the boiling water. The chocolate will slowly melt, leaving a chocolaty scent all through your house! Stir continuously, till the bar has melted completely. Add butter and stir thoroughly. Wait for the butter to melt and thicken the chocolate syrup. Take the mixture off the stove, and allow it to cool down. Spread butter on the bread slices, and spread the buttery chocolaty mixture on top. Grate cheese over the filling, and cover with another buttered slice. Place within the toaster to grill. Wait for one and a half minutes. Your grilled chocolate cheese sandwich is all set and ready to eat! Go give yourself a chocolaty mustache!
