Water- 1- 1 ½ cups

Ingredients-
Unbaked tortillas- 24
2 tomatoes- peeled, seeded and chopped
1 small onion and garlic clove, chopped
2-3 tbsp vegetable oil
2 freshly cooked chicken breasts, shredded
Salt to taste
Procedure-
Place 2 tortillas overlapping. Put tomatoes, onion and garlic in a mixer and puree it. Season with salt. Heat 1 tbsp oil and cook puree add corns and other veggies you wish to, remove from heat and stir in shredded chicken. Fill the tortillas and pin with a toothpick or a long clove. Heat oil in a pan and fry the flutes. Serve with sliced radishes, cucumbers and olives. You could also set aside a bit of the puree as a dip.
#3 Quesadillas
Ingredients-
14 tortillas, unbaked
For filling- 1 cup grated cheese
3 chillies seeded and cut into strips
Salt to taste
Oil for shallow frying
Procedure-
Combine cheese and chilli (jalapenos, olives, corn if you please) in a bowl, season with salt and set aside.
Fill tortillas, seal the edges well.
Heat oil in a frying pan and fry tortillas in hot oil until crisp. Take out and drain excess oil on a tissue paper and serve with sauce and salad.

#4 Mixed Tostadas
Ingredients-
14 tortillas unbaked
1 cup- Rajma
1 shredded iceberg lettuce
2 cooked chicken breasts or turkey, thinly sliced (lightly fried chicken can also be used)
1 cup grated cheddar cheese
Jalapeno to taste
Guacamole- Mash avocadoes with a squeeze of lime juice, chopped coriander, little crushed garlic, chopped spring onions, salt and green chillies.
Procedure-
Heat oil in a pan and fry the tortillas until golden brown and crisp. Spread each tortilla with a layer of beans and lettuce. Spread a layer of chicken on top of the lettuce. Spread a layer of guacamole and then top it with a layer of cheese.

Ingredients-
15 ounces of black beans
1 onion chopped
1 yellow pepper chopped

1 garlic clove, minced
1 pre-baked pizza crust
2 cups chopped fresh spinach
2 tablespoons minced fresh cilantro
Hot pepper sauce

1/2 cup shredded mozzarella cheese

Mash black beans in a bowl. Add onion, yellow pepper, chilli powder and cumin to it. Then, mix tomatoes, jalapeno and garlic in another bowl. Mix both the mixtures. Place the pizza crust in a pan. Ingredients-
1 tablespoon olive oil
1 sliced onion
400g diced tomatoes
50g burrito seasoning
300g kidney beans
1 small BBQ chicken, boneless & shredded
400g burrito tortillas
1/2 a head lettuce, shredded

1 cup grated cheddar cheese
3/4 cup sour cream

Ingredients-
7 ounces green chilli peppers
8 ounces shredded Monterey Jack cheese
8 ounces Cheddar cheese
2 eggs, beaten
5 ounces can evaporated milk
2 tablespoon flour
1/2 cup milk
8 ounces tomato sauce
Procedure-
Preheat oven to 175 degrees C. On a baking dish, spray cooking oil. Place half of the chilli peppers on the bottom of the dish. Sprinkle half of the Jack cheese and Cheddar cheese. Spread rest of the chilli peppers over it. In a bowl, mix the eggs, milk and flour. Pour it over the cheese and chilli peppers arrangement. Place it in the preheated oven. Let it bake for 25 minutes.
