#1 Corn Tortillas

2 cups Corn flour (Makai ka Atta)

Water- 1- 1 ½ cups


Put flour into a bowl, add water and mix into a soft dough that just holds together. Cover the bowl with a cloth and leave for 15 minutes.

Preheat gas oven to medium. Knead dough lightly and shape into balls, press them and flatten out. Cook in a non stick pan for a minute until it starts to curl.

#2 Tortilla flutes or flautas-


Unbaked tortillas- 24

2 tomatoes- peeled, seeded and chopped

1 small onion and garlic clove, chopped

2-3 tbsp vegetable oil

2 freshly cooked chicken breasts, shredded

Salt to taste


Place 2 tortillas overlapping. Put tomatoes, onion and garlic in a mixer and puree it. Season with salt. Heat 1 tbsp oil and cook puree add corns and other veggies you wish to, remove from heat and stir in shredded chicken. Fill the tortillas and pin with a toothpick or a long clove. Heat oil in a pan and fry the flutes. Serve with sliced radishes, cucumbers and olives. You could also set aside a bit of the puree as a dip.

#3 Quesadillas


14 tortillas, unbaked

For filling- 1 cup grated cheese

3 chillies seeded and cut into strips

Salt to taste

Oil for shallow frying


Combine cheese and chilli (jalapenos, olives, corn if you please) in a bowl, season with salt and set aside.

Fill tortillas, seal the edges well.

Heat oil in a frying pan and fry tortillas in hot oil until crisp. Take out and drain excess oil on a tissue paper and serve with sauce and salad.

#4 Mixed Tostadas


14 tortillas unbaked

1 cup- Rajma

1 shredded iceberg lettuce

2 cooked chicken breasts or turkey, thinly sliced (lightly fried chicken can also be used)

1 cup grated cheddar cheese

Jalapeno to taste

Guacamole- Mash avocadoes with a squeeze of lime juice, chopped coriander, little crushed garlic, chopped spring onions, salt and green chillies.


Heat oil in a pan and fry the tortillas until golden brown and crisp. Spread each tortilla with a layer of beans and lettuce. Spread a layer of chicken on top of the lettuce. Spread a layer of guacamole and then top it with a layer of cheese.

#5 Mexican Pizza

15 ounces of black beans

1 onion chopped

1 yellow pepper chopped

3 tablespoons chilli powder

3/4 tablespoon ground cumin

3 tomatoes chopped

1 jalapeno pepper, seeded and chopped

1 garlic clove, minced

1 pre-baked pizza crust

2 cups chopped fresh spinach

2 tablespoons minced fresh cilantro

Hot pepper sauce

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese


Mash black beans in a bowl. Add onion, yellow pepper, chilli powder and cumin to it. Then, mix tomatoes, jalapeno and garlic in another bowl. Mix both the mixtures. Place the pizza crust in a pan. Spread the mixture. top it with tomatoes and spinach. Sprinkle cilantro, pepper sauce and cheeses. Bake at 400 degrees for 12-15 minutes.

In case you want non-vegetarian pizza, add meat of your choice.

#6 Chicken Burritos


1 tablespoon olive oil

1 sliced onion

400g diced tomatoes

50g burrito seasoning

300g kidney beans

1 small BBQ chicken, boneless & shredded

400g burrito tortillas

1/2 a head lettuce, shredded

2 chopped tomatoes

1 cup grated cheddar cheese

3/4 cup sour cream


Heat oil in a frying pan at a medium heat. Add onion and let it cook till it turn golden-brown in colour. Add burrito seasoning, diced tomatoes and 1 cup water. Let it sim for 5 minutes, without the cover. Add kidney beans and shredded BBQ chicken meat. Cook for till the meat turns tender. Keep stirring it at short intervals. Heat the burrito tortillas. Place shredded lettuce onto the tortillas. Place the chicken mixture, chopped tomatoes, cheese and a large scoop of sour cream. Serve with the choice of sauce.

#7 Mexican Rice Recipe

Craving for rice? But don’t want to eat your regular pulao or jeera rice? Here is an easy Mexican rice recipe.


1/4 cup canola oil

1 tablespoon onion powder

1 tablespoon garlic powder

1 cup uncooked white rice

1 and 1/2 cups of water

6.5 ounces of tomato sauce


Heat canola oil in a skillet at a medium heat. Add onion powder and garlic powder to the oil. Let in cook till it turns slightly golden brown in colour. Then add the rice and stir till the rice turns golden. Approximately for 2 to 4 minutes. Pour water and tomato sauce to the rice, and stir. Bring the mixture to a boil. Cover the skillet and reduce the heat to low. Let it sim till the rice is tender, for about 15 minutes.

5 cups cooked black beans

1 can of organic corn, drained

1 tablespoon olive oil

1 diced onion

2 minced cloves of garlic

1 chopped bell pepper

14.5 ounces black beans, mashed

2 tablespoons cornmeal

1 and 1/2 tablespoons cumin

1 teaspoon chilli powder

1 cup salsa sauce


Heat olive oil in a skillet at a medium heat. Add onion, garlic, bell pepper and leave in sim till it turns tender. Add the smashed beans and cornmeal. Add cumin, paparika, chilli powder and salsa sauce. Let it cook for 5-6 minutes. Stuff the filling into tacos.

#11 Chilli Rellenos Casserole


7 ounces green chilli peppers

8 ounces shredded Monterey Jack cheese

8 ounces Cheddar cheese

2 eggs, beaten

5 ounces can evaporated milk

2 tablespoon flour

1/2 cup milk

8 ounces tomato sauce


Preheat oven to 175 degrees C. On a baking dish, spray cooking oil. Place half of the chilli peppers on the bottom of the dish. Sprinkle half of the Jack cheese and Cheddar cheese. Spread rest of the chilli peppers over it. In a bowl, mix the eggs, milk and flour. Pour it over the cheese and chilli peppers arrangement. Place it in the preheated oven. Let it bake for 25 minutes. Remove from the oven and pour tomato sauce evenly over the baked dish. Let it bake again for 10-15 minutes. Sprinkle a little of the cheeses for dressing.

#12 Mango-Almond Sherbet

2 ounces frozen mango chunks

1 1⁄2 cups almond creamer

1⁄2 teaspoon almond extract

1 teaspoon ground cinnamon

1⁄4 cup vodka or tequila

Lime wedges for garnish


Mix mango chunks, almond creamer, almond extract, cinnamon, and cayenne pepper in a blender until the mixture turns smooth and creamy. Blend in 2 tablespoons of vodka or tequila.
