15 Easy Dishes to Prepare from Leftovers

We all struggle with leftovers every now and then. There are times we manage to finish off leftovers but we usually let it sit in our fridge and throw them out eventually. If you are one of those people who does not like to repeat dishes, then I have a really cool solution for you. You could cook a new meal out of a leftover dish that is tasty, innovative and not boring. These dishes are super easy to make at home.

#1 Chicken Salad

Cut the chicken in bite size pieces. Mix in 1 small roasted potato, some spring onions, bell peppers and shredded carrots. You could either make a yogurt dressing or you could just add salt, pepper and lemon, and toss well.

#2 Rice Pudding

Fried rice seems like the only solution when it comes to perish the leftover rice. However, did you know you can also make rice pudding ? To make this old fashion rice pudding, all you have to do is combine the cooked rice with 1/2 cup of milk and salt, cook until it’s thick and creamy. Now stir in another 1/2 of milk, 1 beaten egg and sugar into the mixture. Cook and stir until the egg is set. Remove saucepan from heat and add butter and vanilla extract into the pudding.

#3 Pasta Stir Fry

If you boiled more pasta than you needed, then past stir fry is a great alternative. Heat pan, add 1-2 tbsp oil and add your favorite veggies with pasta. Toss well and season the stir fry with salt, pepper, soy sauce and vinegar. You could also add your favorite meat!

#4 Roti Upma

In a pan, add oil, mustard seeds and jeera. Then, add green chilli and some chopped onions. Sauté for a few minutes. Now add small pieces of the roti and mix well. Cook on a low flame for a couple of minutes.

#5 Grilled Chocolate Sandwich

Butter one side of bread. Heat oil in a pan and cook the bread slice butter side down until pale gold. Put chocolate (dark chocolate can also be used) on the slice and cover it with a naked slice. Cook and flip the sandwich til the chocolate softened and have nice golden crisp to it. Sprinkle with some salt or cinnamon.

#6 Fried Rice

This is one of the easiest recipe for leftovers

In a pan add oil. Let it heat for a while, add chopped onions to it. Fry it till it turns golden. Then add chopped bell peppers, carrots, babycorn and potatoes. Saute it for 10 minutes. Add salt, garam masala, chilli powder, coriander powder and nuts. Finally add the rice leftover from previous night or meal. Let it cook for 15 minutes over low heat.

#7 Cake pudding

Cut the leftovers of cake(s) into thin slices. Place them on a dessert dish. Pour sugar syrup on it. Cut fruits of your choice and spread it over the layer of cake slices. Whip heavy cream in another bowl and spread it on top of the fruits. In place of the cream, you can also prepare custard and spread over the fruits. Refrigerate it for 2-3 hours before serving.

#8 Chicken Sandwich

Shred the leftovers of chicken and mix it with mayonnaise. Add chopped carrots and cucumber to it. Also, add a pinch of salt, add chilli flakes and pasta seasoning. Mix all these ingredients well. Take a slice of bread and spread this mixture over it. Cover it with another slice of bread. Repeat the same till the chicken-mayonnaise paste is used up. Cut them into triangular shapes and serve.

#9 Fish Pate

Do not throw away fish leftovers, there are numerous leftover recipe ideas that can be executed. One of the quickest and easiest method is to make a pate. Mash the leftovers of fish. Mix it with plain yogurt, cottage cheese and butter. Add chopped onion, carrot and coriander to it. Then add corn. Mix it well. Squeeze in a little of lemon juice, and add salt and pepper to taste. You can toast buns or breads and spread on this pate.

 #10 Potato pancakes

Smash the potato leftovers. Combine it with eggs and flour. Add salt, pepper and garlic powder to taste. Heat oil in a pan. Spread potato mixture over the pan. Using a spatula give it a shape of a pancake. Fry till it turns brown and crispy. Repeat the process till  the mixture finishes.

#11 Pizza omelet

Well pizza isn’t one of the things that people leave. However, sometimes after a big party, you might have pizza leftovers. Don’t worry, here is one of most convenient meals from leftovers that you can prepare. This pizza omelet recipe is going to get your breakfast sorted.

Scrape out the pizza toppings. Crack open some eggs and add salt, pepper and spring onions to it. Heat oil in a pan and prepare an open omelet. Then place the toppings in between the open omelet. Add cheese in the centre and roll it up.

#12 Apple Mug-cake

Are your apples getting old? Here’s an easy rescue.

Peel off the apples, cut them into thin slices and grind it into a paste in a grinder. In a coffee mug, add two tablespoons of flour, one teaspoon of baking powder and a pinch of baking soda. Add two teaspoons of sugar and an egg. Beat the mixture well. Then add the apple paste. Stir it again. Preheat your microwave at 180 degrees. Place your mug and let it bake for 2 minutes.

#13 Banana smoothie

Are the bananas you bought a few days ago getting stale? Here is a easy and quick way to save them.

Cut the bananas into thin slices. In a juicer, pour in milk, add sugar and thick cream to it. Add a few cubes of ice. Then add the banana pieces. Switch on the juicer and let it blend it. Pour it out in a jar. While serving in a glass, you may add vanilla ice-cream if you want. In case this doesn’t finish, you can refrigerate it for 1-2 days.

#14 Vegetable rolls

This is one of the easiest any-day recipes from leftovers. In case you have rotis/ chappatis and fixed vegetables left from the previous meal, you can easily make rolls.

In a pan, add oil and keep it over a medium heat. Add the fixed vegetables to it. Add extra flavours if you want to, like salt, garam masala, chilli powder or coriander powder. In a skillet, melt a teaspoon of butter and heat the rotis/ chappatis. Then bring both of them off the gas. Place the vegetables in the centre of the rotis/ chappatis and roll it up.

#15 Noodle patties

In a bowl, crack open two eggs. Add salt, pepper, chopped onion and fresh herbs to it. Then add the leftovers of noodles. Heat oil in a skillet. Place the noodle mixture in a circular shape. Fry till it turns brown.

It might sound cliched to say, “old is gold”, but it is. The leftovers can make great new dishes. You just need to add a few extra ingredients and innovation.
