Ingredients:

Flour – 1 cup

Softened butter – 1/3 cup

Eggs – 2

Sugar – 2/3 cup

Milk – 1/3 cup

Vanilla extract – ½ teaspoon

Lemon zest (can be prepared by peeling the skin of a lemon) –  1 tablespoon

Lemon juice – ½ teaspoon

Procedure:

Preheat an oven to 180 degrees C and line a 12 cup muffin tray with paper. Fold sugar and flour in a bowl. Add the butter mixing slowly. Now beat the mixture while adding the eggs one by one. Ingredients:

Flour – ¾ cup

Sugar – 1 cup

Cocoa powder – ½ cup

Drained yogurt -½ cup

Sugar – ¾ cup

Butter – 6 tablespoons

 Ingredients:

For crust-

Biscuits – 10

Softened butter – 1/3 cup

Powdered sugar -1/4 cup

For custard-

Sugar – ½ cup

Gelatin powder – 1 table spoon

Cream cheese – 1 pack

Whipped cream – 200 ml

Vanilla essence – 2-3 drops

Procedure:

Crush the biscuits into fine powder using a rolling pin or a grinder. Sift butter and sugar with the powdered biscuits to obtain a somewhat wet mixture. You can use cupcake mold for mini cheesecakes but shot glasses can come of great use here. Pour in this mixture to the base of the shot glasses so that about 1/5th of it is filled. Smoothen the base using a spoon. Now, keep them in a refrigerator.

Soak gelatin powder in some water and microwave it for 30 seconds. Now mix all the ingredients for the custard in a bowl and beat till fluffy. Add the gelatin and mix well.  Ingredients:

For Frosting-
Cream Cheese – 2 tablespoon
Butter – ½ stick
Crushed sugar – 2 cups
For Cupcakes-
Butter – 1 stick
Sweet Baking Chocolate – ½ cup
Sugar – 1 cup
Vanilla Extract – 2 teaspoon
Eggs – 3
All – purpose flour – 2/3 cup

Procedure:
To prepare frosting, Beat ingredients on low speed to blend, then on high speed 2 minutes until light, fluffy and refrigerate it to firm up frosting. For Cupcakes, melt butter and chocolate in a medium saucepan over low heat, stirring until melted and smooth and then remove it from heat. Whisk in sugar and vanilla, then eggs, 1 at a time, until well blended. Stir in flour, cocoa and baking powder just to blend. Pour into muffin cups. Bake for 33 minutes and cool in pan on a wire rack.

Unsweetened cocoa powder – 1/2 cup

Eggs – 3

Hot water- 1/2 cup

Flour – 2 1/4 cups

Procedure:
Mix together the flour, baking soda, baking powder, and salt in a medium bowl, set aside. In another small bowl, whisk together the unsweetened cocoa powder and the hot water. Heat butter and sugar together in a medium bowl on the stove on medium to low heat setting and whisk until they are just combined and melted together, add cocoa powder mixture and remove from heat and blend with an electric beater for 4-5 minutes until it is cool. Add in eggs one at a time mixing thoroughly between additions and mix in vanilla. Finally alternate adding in the flour and the sour cream in additions of thirds until they are completely blended in. Pour a little batter over the top of the candy, just enough to cover it. Bake the batter in the oven for 15-18 minutes.
For Frosting, Cream 1 stick of softened butter for 3-5 minutes until it is light and fluffy. Next slowly add in the powdered sugar and mix well between additions. Add the vanilla extract and mix it in. Add the Salted caramel next and thoroughly blend it into the frosting. Place in a piping bag and pipe frosting onto the cupcakes.

#8 Blueberry Filled Cupcakes

Ingredients:

Butter – 1/2 cup
Egg whites – 2
Eggs – 2
All- purpose flour – 2 cups
Baking powder – 1 teaspoon
Salt – 1/2 teaspoon

Buttermilk – 3/4 cup
Sugar – 1 1/2 cups

Ingredients:

All-purpose flour – 1 2/3 cups

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

For the cupcake first, preheat the oven to 350 degrees and in a medium bowl, combine the flour, baking powder, baking soda, and salt. Stir with a whisk. In another bowl, beat the butter, oil, and sugar together until well combined and fluffy. In the same bowl, beat in the eggs, one at a time, followed by the mango extract and then add in half the flour mixture from the first bowl, then the mango puree, and then the rest of the flour mixture. Beat until the batter is smooth, pour the batter evenly among the prepared muffin cups. Bake for 20 to 25 minutes and then after they cool down, top them with frosting.
Now for the frosting, in a bowl, beat the butter and shortening on medium speed for 2 minutes, until fluffy. Add the mango puree and mango extract and mix to combine and finally, add the sugar, one cup at a time, mixing on low speed until well combined.

#10 Banana Pudding Cupcakes

Ingredients:

Vanilla cake mix – 1 box

Instant vanilla pudding mix – 1 box

Cold milk – 1 1/2 cup

Sweetened condensed milk – 1 cup

Chopped bananas – 1/2 cup

Heavy cream – 2 cup

Powdered sugar – 1/4 cup

Vanilla – 1/2 teaspoon

Sliced bananas, for garnish

Add eggs and vanilla and beat followed by adding milk and carrots and beating until combined. Now add flour mixture in three batches, beating until each batch is just incorporated. Continue with remaining flour in two more batches. Fill each cup 2/3 of the way with batter, and bake but rotate pans after 15 minutes, about 20 minutes.
