Summer is officially here. As the temperature soars, all of us want winter to return. But one thing well want year-round is mango. Raw or ripe, mangoes can be enjoyed anyway. While the usual way is to either have mango milkshake or mango sprinkled with black salt and chilli powder; we bring you 5 mango recipes that are easy to whip and helps beat this heat.
#1 Mango Lassi
Ingredients: 2 sweet mangoes, 1 cup (250 grams) fresh yogurt, 3 tablespoonful sugar, 4-6 ice cubes, water (if necessary)
Procedure: Peel and chop the mangoes into small pieces. Blend yogurt, sugar, ice cubes, few teaspoons of chilled water and chopped mangoes until the mixture becomes smooth. Blend this till the mixture becomes smooth. And voila, your mango lassi is ready! Top the lassi with a few mint leaves.
#2 Mango Chutney
Ingredients: 2 large or medium sized mangoes, 1 cup sugar, 1 table spoon vegetable oil, 2 table spoon Red Chilli powder, a pinch of panch phoran.
Procedure: Peel and chop mangoes into small pieces. Heat oil in kadhai or frying pan and let the panch phoran fry till it turns golden. Now add the mangoes, sugar and red chilli powder and stir well. Let the mixture boil on low heat for about 7-8 minutes. Add water depending on the thickness you wish. Serve hot or chilled as a side dish.
#3 Mango Cheesecake
For the crust: 20 uiscuits, 60 grams Butter, 1 tablespoon powdered sugar.
For the filling: 3 mangoes, ½ cup sugar, 1 table spoon gelatin powder, 1 pack cream cheese, 200 ml whipped cream, 2-3 drops of vanilla essence.
Procedure: Crush the biscuits and mix heated butter and the powdered sugar with the crushed biscuits and fold well. Cover the base of a baking tin with butter paper and prepare the crust of the cheesecake by spreading out the mixture using a spoon or a spatula. Now put this in the refrigerator.
In a small bowl, mix gelatin with lukewarm water. Puree the mangoes in a grinder or mixer and put aside. In a bowl, mix a pack of cream cheese, about 3/4th cup sugar and a few drops of vanilla extract. Beat the mixture with a hand blender till it turns creamy. Beat 200 ml of whipped cream in a separate container and finally, mix these two mixtures. Now, spread this mixture over the crust that you have set aside in the refrigerator.
Last step, mix the gelatin solution with the mango puree. Spread it over the cream cheese layer and your mango cheesecake is ready! Refrigerate it overnight and garnish with mango slice while serving.
#4 Mango Shrikhand
Ingredients: ½ cup mango pulp, 1 cup powdered sugar, ½ teaspoon cardamom powder, 1 ½ cup hung curd.
Procedure: Prepare mango pulp by blending small pieces of mangoes. Hung curd can be prepared by straining normal curd. Add sugar, curd and cardamom powder to mango pulp and mix well. Avoid blending it. When the lumps vanish, your aamrakhand is ready. Serve cold!
Ingredients: 3 mangoes, Sugar as required, 1 cup milk, a few strands of saffron, cardamom powder.
Procedure: First, peel and cut the mangoes. Pour in a blender the chopped mangoes along with the sugar and milk. Blend until the mango becomes fine. Now pour the mixture in a big bowl and mix a few strands of saffron. Stir well. Let the aamras freeze for at least 6 hours. Serve with roti or puri.
